Curried Chicken Salad

I am always looking for new ways to make chicken exciting and easy. I stumbled on this idea after going out for dinner with my family. We were at a pizza place, and even though my son was enjoying his slice- he kept trying to eat off my plate (using a clean fork of course so as not to expose me to the gluten). I was eating a curried chicken salad, and since he loved it so much, I told him I would make a homemade version that he could take for school lunch. 

Since then I have had a number of house guests who have flipped over this salad. I promised my mom I would post this recipe so she could make it at home. So mom- this one is for you.

Ingredients:

1 chicken breast (preferably pasture raised and organic)

1 heaping tablespoon mayonnaise

(I recommend Primal Kitchen Avocado Mayo- it has a yummy mayo flavor but is made with high quality ingredients like avocado oil, which is way healthier than canola oil which is in traditional mayonnaise.)*

1 ½ teaspoon curry powder

1 apple, diced

Instructions:

Slice the chicken up into small pieces. In a bowl, mix mayonnaise and curry powder. Add chicken and apples and mix well. Eat immediately or store in the fridge for later. (I often make a lot of this salad and keep it in the fridge for the week. It’s an easy breakfast or lunch- just add veggies!
